5 lb leg</p>
<p>Sauce<br />
2 oz almonds<br />

<p>Method<br />
Remove fat and skin from lamb leg<br />
Put lamb leg in a baking dish. Add almonds, onions, garlic, ginger, green chillies, and 3 tbsp of the plain yoghurt into the container of a food processor or blender and blend until you have a paste. Put yoghurt in bowl<br />
Beat lightly with a fork until it is smooth and creamy<br />
Add the paste from the processor, the cumin, coriander, cayenne, salt and garam masala and mix. Push some of the spice paste into all the openings of the lamb.<br />
Spread the paste evenly on the underside of the leg<br />
Spread a thick layer of paste over it.Using a sharp knife, make deep cuts and and add the paste into the lamb all over<br />
Pour remaining paste around it. Cover with plastic wrap and refrigerate for 24 hrs<br />
Next day, bring meat back to room temp. Remove cling wrap.<br />
Heat oil in a pan, when it gets hot put in cloves, cardommom, cinammon, and peppercorns<br />
When the cloves swell. Pour this over the lamb<br />
Preheat oven to 400F, cover with foil and cook for 1 hr and 30 mins<br />
Remove foil and then cook for 45 mins<br />
Baste 3-4 times with sauce during this period. Scatter and arrange almonds in a pattern and bake for 5-6 mins<br />
Remove from oven and let it sit in a warm place for 15 mins<br />
Remove and discard all the spices and fat from the meat<br />
Pour sauce over the lamb leg</p></div>

500 gms chicken
2 tbsp soya sauce
1 egg
2 tbsp corn flour

2 green onion flour
1 tsp garlic paste
salt to taste

1 tsp sugar
A pinch of ajinomoto
2 cups chicken broth
1 tbsp oil
Oil to fry
Method

500 gms chicken<br />
2 tbsp soya sauce<br />
1 egg<br />
2 tbsp corn flour<br />
5-6 green chillies<br />
2 green onion flour<br />
1 tsp garlic paste<br />
salt to taste<br />
1/2 tsp white pepper powder<br />
1 tsp sugar<br />
A pinch of ajinomoto<br />
2 cups chicken broth<br />
1 tbsp oil<br />
Oil to fry</p>
<p>Method<br />
Take 1 tbsp soya sauce, 1 tbsp corn flour, salt, egg, in a bowl and marinate chicken pieces in the mixture for about 10-15 mins<br />
Heat oil and deep fry the marinated chicken pieces till golden brown<br />
Now in a separate wok, heat 1 tbsp oil and add garlic paste and green chillies and saute for few seconds<br />
Add 2 cups chicken broth. Bring to boil and add sugar, pepper,salt, ajinomoto and remaining soya sauce<br />
Add fried chicken pieces to it and cook for few minutes<br />
Dissolve the remaining corn flour in 1/2 cup water and add to the curry stirring constantly to avoid lumps. Cook for 2-3 mins<br />
Serve chilli chicken hot and garnished with green onions.</p>

Immediately pit into 6 custard cups<br />
In a large bowl, with wire whisk, beat eggs, egg whites, and 1/3 cup sugar until well blended<br />
Beat in milk and vanilla. Pour custard mixture into custard cups<br />
Place cups in large roasting pan and pour boiling water halfway up the sides. Bake 40 mins or until center of custard is set<br />
Remove from water and cool on wire rack. Cover and chill for 4 hrs before serving<br />
With a small spatula carefully loosen custard. Invert each onto dessert plates, tapping cup to help release custard.<br />
Leave cup inverted so all the caramel can drip onto custard</div>

In a 3-quart saucepan, heat water, butter, and salt to boiling on medium until butter melts. Remove saucepan from heat, vigorously stir in flour at once until mixture forms ball and comes away from the side of pan<br />
Add eggs, one at a time, beating well after each addition until batter becomes smooth and satiny<br />
Drop batter by scant 1/4 cups into 10 large mounds 2 inches apart, onto cookie sheet.<br />
With fingertip moistened with water, gently smooth tops to round<br />
Bake 40-45 mins or until golden brown. Remove from oven.<br />
With knife poke a whole on each side to release steam<br />
Let puffs stand for 10 mins in oven again<br />
Cool completely on wire rack<br />
Using knife cut in half. Discard moist dough from inside<br />
Meanwhile chop chocolate. <br />
In a 1-quart saucepan, heat half and half and sugar to just boiling.<br />
Remove saucepan and add chocolate and let stand 1 min. Whisk until smooth<br />
Serve with icecream in each puff base then drizzle warm chocolate sauce</p>
