Sauteed Spinach | Mar 15th 2008

Ingredients
1 tbsp olive oil
2 cloves garlic crushed
2 bags spinach rinsed
1 tbsp lemon juice
salt

Method
In a saucepan, heat oil on medium high until hot
Add garlic and cook for 1 min or until golden, stirring
Add spinach with water clinging to leaves in 2-3 batches; cook 2 mins.
Cover for 2-3 mins more or until spinach wilts
Remove from heat. Stir in lemon juice. and 1/4 tsp salt

45 cals 4 g total fat (1 g sat fat)
